Noir d’Olive Organic is made from 4 olive varieties from our organically cultivated orchards, harvested at full maturity and stored in paloxes away from oxygen. This is followed by the delicate process of slight fermentation combined with expertise to rediscover the taste of candied black olives from our ancestors’ millstones. The art lies in achieving this distinctiveness without suffering its flaws!
Tasting Notes
This vintage will delight lovers of black fruity olive oil. It presents all the positive attributes of the AOP Vallée des Baux aromatic palette: ‘chômé’ nose, black tapenade, candied olive, finishing with truffle aromas and a great smoothness on the palate.
Suggestion
Noir d’Olive Organic can be used cold in salads, to make mayonnaise or aioli, and drizzled over fish, mushrooms, and mashed potatoes.
